A Peach and Oat Breakfast You Can Prep the Night Before

Morning moves gently when breakfast is already waiting.

This is a peach and oat jar you build the night before. You stir it once, close the lid, and let time do the rest. By morning the oats have softened. The peach has settled in.

Late summer is the moment for this. Peaches are heavy and ripe. Use them while you can.

What you will need

One jar. One spoon. A few minutes.

  • Half a cup rolled oats
  • Half a cup milk of your choice
  • Two tablespoons plain yogurt
  • One ripe peach, diced
  • One teaspoon maple syrup or honey
  • A pinch of cinnamon

How to build it

  1. Add the oats to a jar or bowl.
  2. Pour in the milk and yogurt. Stir until the oats are wet through.
  3. Fold in most of the peach, saving a few pieces for the top.
  4. Add the syrup and cinnamon. Stir once more.
  5. Layer the reserved peach on top. Close the lid.
  6. Rest it in the fridge overnight, or at least six hours.

In the morning, eat it cold, straight from the jar. Or warm it briefly if the day is asking for something soft.

Substitutions

This recipe bends easily. Let it.

  • No peach? Nectarine, plum, or berries all work. Use what is ripe.
  • No yogurt? Skip it, and add a splash more milk.
  • Gluten-free? Choose oats marked as such.
  • Want more texture? Stir in a spoon of chia seeds. The oats will thicken more overnight.
  • Nutty finish? Scatter chopped almonds or a spoon of nut butter on top in the morning.

A less-sweet version

Ripe peaches carry their own sweetness. If you would rather taste the fruit and the oats plainly, leave out the syrup entirely.

Add a little lemon zest instead. It lifts the peach without sugar. A pinch of salt does the same in a quieter way.

Storage notes

Keep the jar sealed in the fridge and eat within two to three days.

Fresh peach softens as it sits, so if you are prepping several jars at once, add the fruit the morning you plan to eat rather than all at the start.

The oat base alone keeps well. You can make three jars of the plain mixture on Sunday and top each with fruit through the week.
